Rubeshibe area has the best output of white flower beans in Japan, but the cultivation is almost manual. The seeds are sown in spring, and the supports called ‘Medake’ are propped up after the shoots grow slightly. The vines grow up to more than 3 meters, so they need to be coiled around the supports by hand. In summer, the white flowers bloom all over the fields, and the vines are taken out from the supports in fall to dry naturally for a half to one month by ‘Nio Pile’. It is said that cultivation of white flower beans is time-consuming and very hard because of the manual processes, however, the producers grow each bean very carefully with love. The rarity value and the good quality have been recognized, so the price has keeps stable as a kind of high grade beans. That also supports the producers.
